Pâte Sucrée
9 Tbsp butter
1 cup 10x sugar
pinch salt
1 egg
1 ¾ cups all pourpose flour
Mix butter and sugar til just combined. Add salt, egg, flour. Mix til comes together.. Wrap and chill til needed. Bake in 9 inch pie shell.
Filling
3 eggs
½ cup plus 1 tablespoon sugar
3 tablespoons butter, cubed
zest of 3 lemons
juice of 3 lemons
Combine all in bain marie (water bath) and heat, whisking often, til butter is melted and ingredients are combbined. Pour into prebaked tart shell. Bake at 325° 10 - 12 minutes, til center is set.
