William Watts is the general manager of the entire 1789 Restaurant property, which includes The Tombs and F. Scott's. He has presided over this historic landmark destination since Clyde's Restaurant Group purchased it in late 1985. Under his leadership, 1789 Restaurant has consistently ranked among Washington's most highly regarded restaurants receiving the DiRoNA Award in recognition for its outstanding food and service. Watts also serves as the restaurant's wine authority. His progressive and well-balanced wine list recently captured The Wine Spectator's Award of Excellence.
Watts is a man with many talents and passionate interests. He is a graduate of The American University with a degree in international relations/political science. As an undergraduate, he worked at the Bureau of the Budget in the Old Executive Office Building. Upon graduation, however, he decided to pursue other career options. He followed his love for horticulture and became the head groundskeeper at Harvard University's Center for Hellenic Studies in Washington, D.C. Then in 1975 his interest in food and wine was sparked when he was offered and accepted the position of manager at Clyde's of Georgetown.
His successful 26-year plus career with the Clyde's Restaurant Group is a testament to William's gracious skills as a host and manager. His design talents and horticultural background are also showcased throughout 1789 Restaurant and are most apparent during the Christmas season. As described in Gourmet, "This is like stepping into a Christmas card. The huge mantel is decked with greenery and crimson bows, gingerbread men and sugar cookies." He also recreated 1789's memorable holiday decor at the James Beard House in New York when the restaurant presented its Potomac Christmas Dinner. Each year he brings 1789 Restaurant to a new level of excellence in service. A man of discriminating taste, William Watts has strong interests in food, wine, antiques, music, travel, fishing and landscape architecture.
