Nick Moone

Wine Director

Nick Moone joined 1789 Restaurant, Fitzgerald's, and The Tombs in March 2025 as Wine Director & Manager, bringing with him a rich background in fine dining wine and beverage programs and a deep respect for the craft of hospitality.

Nick's path began at San Diego Miramar College and San Francisco State University, where he earned his BA in Journalism with a minor in Visual Anthropology, a foundation that shaped his storytelling approach to wine service. His career carried him through some of the country's most celebrated dining rooms, including Hakkasan, The Village Pub, and Eight Tables by George Chen, where he helped shape service and beverage strategy with a Michelin Star in mind. At The Village Pub, he managed a 2,700 selection, Grand Award winning cellar, honing the meticulous eye for curation he now brings to 1789's own storied wine program.

Most recently, Nick served as Beverage Director & Assistant General Manager at Annabelle Restaurant and Sommelier at Apéro & La Bohème, earning Best of Award of Excellence honors at both. He holds certifications as a Certified Sommelier through the Court of Master Sommeliers, a Certified Specialist of Wine, and a Certified Whiskey Professional, along with Italian, French, and Spanish Wine Scholar designations, expertise he now channels into curating a wine and cocktail program worthy of 1789's legacy as one of Washington's most iconic dining destinations.
